Aloha and Welcome to the BIG WIND KITE FACTORY Handmade Kites and Windsocks from Hawaii.

All of our kites and windsocks are made here on molokai from nylon. We use fiberglass spars for the kites and the hoops of the windsocks are made with poly tubing. All edges not fully hemmed are cut with a hot knife to seal the edges.

While you are on Molokai please be sure to drop by for our free factory tours. We will give away all of our secrets, tell a few corny jokes and direct you to the best kite flying places on the island. We give free kite flying lessons at our Aeronaughtical Testing Facility, the park next door.

Originally opened as a fruit stand in 1950, it reopened to the public as Hawaii?s "Pineapple Experience" in 1989 after an extensive remodeling of its previous facilities. Kauai Coffee

Kauai Coffee got its start in the early 1800s as McBryde Sugar Company, one of the first sugar growers in Hawaii. The transformation from McBryde Sugar Company to Kauai Coffee in 1987 represents Hawaii's largest diversified agricultural project in the past 50 years.

The Kauai Coffee venture experienced a severe setback in 1992, when Hurricane Iniki inflicted $8.5 million in damages to the coffee crop. The future of Kauai Coffee, and all of Kauai, looked bleak. Fortunately, both made a comeback, and in 1996, Kauai Coffee's harvest exceeded the volume of coffee produced by the entire Kona region.

Kona Brewing Company

Kona Brewing Company was started by father and son team Cameron Healy and Spoon Khalsa. The pair had a dream to create fresh, local island brews made with spirit, passion and quality. Their love of Hawaii, and a desire to protect the pristine environment here, brought them to the Big Island to fulfill their vision. Kona Brewing continues to be headquartered right where it began, in Kailua-Kona on Hawaii's Big Island.

The brewery began brewing and packaging beer in February 1995. Since that first year, beer production at the Kona facility has increased every year by a total of 585 percent. Several tanks and other brewing equipment have been added through the years to enable increased production. Today, the brewery consists of a mash tun, brew kettle, whirlpool, 10 fermenters, five conditioning tanks and two grain silos. A staff of six pumps 310,000 gallons of beer each year, filling the 4,000 kegs kept in circulation throughout Hawaii.

When we moved to our 6-acre orchards and home overlooking the Kona coastline in 1997 from North Carolina, fulfilling our dream to live where the mountains meet the sea, we dedicated ourselves to creating the finest products ~ Kona Coffee, and now 100% Hawaiian Chocolate. There is something about our volcanic soil, Island showers and tropical Hawaiian sun that blesses our crops with unique flavor that is world renowned.
This is especially true with our totally unique chocolate. We are ONLY the first producers to grow and process all-Hawaiian chocolate anywhere on earth. From the 1,600 cacao trees that surround our Keauhou home we process only Big Island grown cocoa beans. Our micro processing factory was the first one in Hawai'i ~ assuring total quality control from the fields to the final chocolate bars.

How Our Cocoa Beans Become Chocolate Bars

It all starts with tiny cacao blossoms. Pollinated flowers develop small pods, which can take 5 months to mature. Ripe cacao pods are brightly-colored and ready for harvest, using hand pruners and extendable sickles. Harvested pods are cut open to extract the raw cocoa beans, which are collected in buckets and weighed. Raw cocoa beans are fermented for 6-8 days in special “sweat boxes”, where they naturally heat up to 122º and “sweat” off their coatings. The beans are then placed on drying racks in the sun for 22-28 days, until their moisture content reaches 7%.

Sun-dried beans are then roasted to lock in their flavor and sent to the winnower, which removes the shell and breaks the beans into bits called nibs. The nibs are ground in the conch for 2 hours, creating a concentrated liquid called cocoa mass. Vanilla and lecithin (an emulsifier) are added, along with other ingredients for dark or milk chocolate. Conching continues for 18 more hours producing a velvety smooth texture. Traveling from the conch through the holding tank, the chocolate arrives at the temperer, where it cools 2-1?2 hours from 120º to 86º. In the temperer, the cocoa butter crystals stabilize, giving the finished chocolate a brisk snap and satin sheen.

Each piece of chocolate is hand-poured, then cooled for de-molding and packing. Our unique packaging is perfect for gifts and sharing sweet memories of Hawaii! The hands that pick, process and create our chocolate are often the same ones that carefully pack and ship it to you. Pure Hawaiian goodness - from seedlings to bars of melt-in-your-mouth delight. Since we only produce a limited amount we treat each bar with tender loving care. Located in one of the most historic buildings on the island of Maui. The King's Cottage dates to 1874, when it was built specifically for the visit of Hawaii's monarch David Kalakaua and queen Kapi'olani. During his turbulent reign, which began that year and lasted until his death 1891, Hawai'i's last king often came to Ulupalakua find peace of mind.
The centerpiece of the Tasting Room is an eighteen-foot-long bar cut from the trunk of a single mango tree. Shelves are stocked with Hawaiian-made products and specialty foods and gifts.

The Tasting Room provides packaging to make it easy to carry our wines back home, either carried on or checked as luggage. The outlying grounds, shaded by trees more than a hundred years old, retain the buildings and landmarks of a fascinating bygone era. This is the landscape of old Rose Ranch, one of Hawai'i's most prosperous and admired nineteenth-century sugar plantations as well as the headquarters of present-day 'Ulupalakua Ranch, home of the Paniolo or Hawaiian cowboy.

Today the ranch is a destination for visitors exploring rural Upcountry Maui. They picnic here and learn island history by touring the grounds.
The Kalakaua Cottage Tasting Room is open nine to five daily (except for major holidays).
